Mango Cantaloupe Soup
Add Aloe Select Mango to this refreshing appetizer soup for a sweet surprise.

  1. Cut cantaloupe in half and scoop out pulp and seeds.
  2. Peel cantaloupe and cut into smaller chunks (about 1/2 inch).
  3. Add cantaloupe, Aloe Select Mango, Greek yogurt, salt, a small amount of sweetener (about 1/2 tsp), and ginger (if desired) to blender.
  4. Blend until smooth, you may need to add more Aloe Select Mango for a thinner, smoother soup.
  5. Taste and adjust salt and sweetener as needed. More Greek yogurt will make your soup creamier, but may require additional sweetener depending on personal tastes.
  6. Pour into bowls, garnish, and serve.

There are so many ways to garnish your cantaloupe soup!

  • Try a dollop of Greek yogurt, some berries, or some mint leaves.
  • For a formal or special occasion, gently set some edible flowers on top.

While this is a fresh, flavorful appetizer, it can also be a great light lunch or dinner, especially with some additional Greek yogurt for added protein.
